2009 Niche Meat Market Conference March 26th - Cutting Edge Meat Processing Tour This year's conference will feature a tour of Cutting Edge Meat, a USDA inspected harvest and processing facility. The plant is located in Newman, CA. After the tour, we will have discussions working with processors, meat cutting instructions, and the need for more USDA processing.
